A carbon steel wok is the opposite of disposable cookware: it starts sticky, then seasons with use into a naturally slick surface that only improves. After a month of cooking it outperforms non-stick — and unlike non-stick, there's no coating to scratch off into your food.
For Kenyan kitchens it's superb for stir-fries, fried rice, sukuma wiki with onions, and anything needing proper searing heat. The flat-bottomed version works on both gas and electric plates — a detail worth checking before buying.
The learning curve is real: it needs seasoning (oil + heat, repeated), hand-washing, and drying immediately to prevent rust. If you want zero-maintenance, buy non-stick; if you want a pan for life, buy this.
